Domaine de la Borde - Pinot Noir Sous la Roche 2016
Julien Mareschal of Domaine de la Borde makes some of the most enchanting Jura wines we have come across, though sadly the quantities available are miniscule. Julien has 5 hectares of vines on the slopes of the most prestigious Jura appellation of Pupillin and his are some of the highest at up to 550m above sea level. Winemaking is biodynamic with hand-harvesting, native yeasts and minimal sulphur.
The Pinot Noir Sous La Roche comes from vineyards grown in a clay-calcareous terroir on deep gray marls, oriented to the southwest with a steep slope and at an altitude of 500 meters. The harvest is manual and then it is destemmed. The semi-carbonic maceration lasts 20 days, including 2 days of cold pre-fermentation maceration and some pump-overs. Aging is 10 months, in 228-liter barrels.
Sous la Roche is a famous vineyard where, amongst others, Jean-Francois Ganevat also creates single vineyard wines.
