Envínate is one of our favorite wineries, created mind-expanding, impressive wines from different parts of Spain. The winemakers have met each other in wine school and decided to start working together under the same name, even though their vineyards are far spread over the country.
This Palo Blanco hails from Tenerife, made from the Listan Blanco grape, which is the local name for Palomino, the grape used in Sherry wines. It is a wine of impressive acidity, salinity and minerality, sometimes dubbed as the Meursault of Tenerife. Smokey in its smell because the volcanic soil, coming from ungrafted, 100+ year old vines that are trained in the local 'cordon trenzado' method.
These are the last two bottles of the 2018 vintage, where the extra years in bottle serve the wine tremendously. As good as Palo Blanco gets. We recommend decanting this wine ahead of serving it.
