Guimaro - Mencia Joven 2020

Guimaro is a top producer for Mencia wines from the magical slopes of the Ribeira Sacra. This specific young release is made from Mencia + 15% other varieties, selection from terrace vineyards, 70% along the Rio Sil (slate and granite) and 30% along the Rio Minho (sand, quartz and slate).

Fermentation is whole bunch in open wooden tank, semi carbonic start, maturation on steel and a small part on wood. This is fresh, earthy, crunchy with wild herbs and pure red fruit. Delicious as a Morgon from Beaujolais, bottled with only 30 ppm sulfur to retain energy and freshness.
