Jiménez-Landi - El Corralón 2019
65% Garnacha, 30% Syrah, 5% Cabernet Sauvignon
Sierra de Gredos, Spain
This small and family-owned wine estate was founded in 1963, but got its real start in 2004, when cousins José and Daniel decided to grow wine there using traditional techniques and biodynamic principles. The core of the Jiménez-Landi vineyard is Grenache, which has to endure the harsh climate of harsh winters and hot summers on granitic soil. But the results are definitely worth it.
After a cold soaking, fermentation of the partially unzipped bunches is started with autochthonous yeasts and temperature control. After a maceration of 20 to 30 days, it matures for a while in French oak barrels.
