ASOP Wine Class: Co-ferments
On to a personal favorite: the world of co-ferments. We have been quietly saying this during many of our tastings. We believe the future of (natural) wine is in co-ferments. What is a co-ferment? In short it's a wine made from different fruits. Often mostly grapes or apples, with an addition that can be blackberries, cherries, herbs, honey and much more. So much to discover and also a product that steers away from major monoculture plantings in the wine regions. We're all for it, are you joining us?
