Optimbulles - Embryo

A crazy wine: Sauvignon Blanc from Belgium by natural winery Optimbulles. Zero sulfur, fermented and aged in a concrete egg. It has the floral notes typical for Sauvignon Blanc but then with lingering, high acidity from the cool climate. A wine with some aging potential but really foremost a discovery of a new terroir.
